This is such a tasty, nutritious dish that it will soon become a family favorite. If you’re like me, I grew up hating spinach. Usually the greens were thrown into a pot and boiled flavorless until I had to choke them down. Spinach however, along with other dark leafy greens like Swiss chard, turnip and collard greens and bok choy are laden with vitamin C, calcium, folic acid, vitamin K, lutein and iron. I added a red pepper for sweetness, contrast, vitamin A and more C. It makes a visually striking dish. |

Ingredients
Wash spinach thoroughly. It grows best in sandy soil, so be sure to wash off all the grit. If available, strain the leaves through a vegetable spinner. Mince garlic. Chop red pepper. Put two tablespoons of olive oil into a wok, or large fry pan. Add four minced cloves of garlic. Stir fry for a minute. Gradually add spinach leaves. Almost miraculously, the heat will reduce the volume of the spinach. Keep adding the rest of your spinach until it is evenly cooked. Add chopped red pepper. You want the red pepper heated enough to activate the Vitamin A, but not overcooked to sap the strength of the Vitamin C. Stir in soy sauce. Mix well, and serve. That’s it. If you really want to get fancy, sprinkle with a light dusting of feta or goat cheese before serving. All recipes presented here have been kitchen tested by the producers of "Reverse Aging Now."
